Double Deuce Ackee — canned ackee in brine, ready to drain and cook. It's soft, buttery and pale yellow, the heart of ackee and saltfish. Sauté it with salt cod, onion, sweet pepper and thyme. Drain it gently and add it last, so the pieces stay whole.
